How long does it really take?

Most people are live in two to three minutes, search your business, pick a style, publish. There is nothing to install and no signup needed to see your site first, because it is built from your Google listing rather than from a blank page.

Do I have to keep the opening hours in two places?

For your normal week, no, change it on your Business Profile and the site takes it, so there is one place that happened. A ONE-OFF is different: Google keeps a bank holiday as a separate exception and Clay does not read those, so a day you are shut for Easter you change on the site. Can people scan a code at the table to see the menu?
