The server checks again when the booking is submitted, not just when the page was drawn. A slot that went while somebody was filling the form is refused rather than double-booked.

Yes, and the slots stop being offered immediately. Anybody already booked keeps their booking and you have their number.
No card is touched anywhere in a Clay booking. A deposit is STATED, worked out on the server from the service and the party size, printed on the card they book from and in both confirmation emails, and paid to you when they arrive. Nothing is taken online, so there is nothing for anybody to take a cut of: what a deposit protects.
