My work genuinely varies. Can I still publish?

Yes, as a range and a from. What you cannot do is a fixed price, and nobody expects one; what they expect is not to be left guessing.

Will I not lose the big jobs?

A from figure does not cap anything. It sets a floor, and the people it turns away are the ones who would have been turned away later, more expensively.

What if I am the expensive one?

Say the number anyway. Somebody who can afford you finds you faster, and somebody who cannot never becomes an unhappy customer.

How specific should the range be?

Specific enough to plan around. From four hundred to twelve hundred is a range; it depends is not.

Should I list every service?

If they are countable, a list is better: a price list page. This page is for work that cannot be listed.
